zucchini and chocolate?

OK, so I already ate alot, and it is very delicious! When your garden is exploding with squash and friends and neighbors say no thanks to your zucchini offerings, you've gotta find a way to put them to good use. I bet no one will turn down a loaf this chocolate-y. This amazing recipe is exactly what to do with acres of squash. (One recipe will use one entire medium sized zucchini) Really easy recipe too: Preheat oven to 350 degrees

3 eggs
1 cup vegetable oil
3 cups zucchini, finely grated
2 tsps. vanilla
2 tsps. salt
2 cups granulated sugar
1tsp. cinnamon
2 tsps. baking soda
1/4 tsp. baking powder
2 1/3 cups flour
1/2 cup unsweetened cocoa

Directions: Combine dry ingredients, mix with whisk. In a separate bowl, mix together eggs, oil and zucchini, then add dry ingredients; mix together. Pour into 2 mid-sized greased loaf pans. Bake at 350 degrees for 45-50 minutes. Makes 2 loaves. Share with friends.
